Today’s recipe was inspired by an ancient civililzation that lived in the land of Canaan near the eastern shores of the Mediterranean Sea. Much of their food was plant based and of course at that time, all seasoned with natural herbs and spices. To date, the Mediterranean cuisine is said to be among the healthiest in the world.
As you can see, I spend most of of my time shopping in the produce section of my local grocery store. Once you get accustomed to increasing your fruit and vegetable intake, you’ll certainly start to feel ‘revitalized’ and you’ll feel the difference from within.
- Bell peppers (red or yellow)Brussel sprouts
- Sweet potato
- String beans
- Tofu (firm)
- EVOO for flavour
1. Cut cabbage in steak slices, cube some sweet potato, flavor both with a tip of EVOO and some of your favourite seasonings and bake @350 until tender.
2. Lightly steam some broccoli, string beans, and brussel sprouts.
3. Cut firm tofu into squares and soak in some light soya sauce, chilli powder, cut onions, garlic, and bell pepper. Sautée. Enjoy!
