Who knew that vegan ice cream could be as easy as blending a few frozen bananas? “Nicecream” is all the rage right now as it has a similar consistency as dairy ice cream. This is especially good for those who may have lactose intolerance or particular allergies to dairy products. I created this combination by using figs and banana’s with both fruits having a long list of health benefits. Figs are considered to be among the healthiest fruits known to man as they help manage high blood pressure, fight cancers and promotes weight loss to name a few. Thus tasty treat is just as, if not more, delicious than the dairy option, not to mention the positive effects on the waist line. Give it a try and let us know what you think.
For this cup as shown:
Blend 1 date, frozen bananas and half a fig.
Whiz till smooth. Top with walnuts (optional) and a slice or any remaining fig for garnish.
